I mean, fruit and chocolate - is there anything better? Enter these marvelous little indulgences that aide in taking the edge off my cravings for something more mischievous. Primitive at best, they are made with fresh blueberries, semisweet chocolate, coconut oil, and finished with some flaky sea salt. I once put a container of these clusters together for a picnic. Sort of… It was totally unintentional really. I had not planned suitably past the libations and the sandwiches, so the ‘sweet ending’ was about to fall into the hands of a local bakery for some cookies until I reached into my freezer to grab some ice. It was then I realized a batch of Chocolate Blueberry Drops I'd made weeks earlier would serve as last minute “pop-ems” that would not be too much, and not be too little for the Indian Summer al fresco my friends and I were embarking on.
Hard, but worth the 30-minute wait, is allowing Chocolate Blueberry Drops With Flaky Sea Salt the time needed to properly set up in the refrigerator. I go a step further and freeze them after they’ve set, tossing them into baggies and keeping them within reach to quell the screaming sweet tooth that has gotten the better of me my whole life…
Ingredients for Chocolate Blueberry Drops With Flaky Sea Salt
1 1/2 cups semi-sweet chocolate chips
1 tablespoon coconut oil
2 cups fresh Blueberries
Line a cookie sheet with parchment.
Over a medium saucepan with water at a steady simmer, place a glass bowl atop along with the coconut oil.
Add the chocolate chips and stir to melt. Keep the chocolate moving to maintain smoothness.
Working side by side with the parchment-lined cookie sheet, spoon a scant splotch of chocolate onto the baking paper and top with 4 to 5 blueberries each.
Drizzle additional chocolate over blueberries, and just the slightest amount of flaky sea salt atop each cluster.
Place the cookie sheet into the refrigerator and chill until set, about 30 minutes.
Pop the drops from the parchment and toss into baggies to store frozen for a sweet snack.
