Ingredients For Making This Blueberry Cake Recipe

Prepare the Blueberry Sugar


In a small bowl, mash berries with a fork. Add sugar and mash then add another sugar and continue mashing until the mixture turns purple and the grains are loose. Adjust consistency with more berries or sugar if needed. Set aside.

Prepare the Lemon Glaze


Mix butter, powdered sugar and lemon juice in a glass measuring cup until smooth. Microwave then whisk to remove any lumps. Set aside.

Prepare the Cake


Preheat oven. Grease and flour an 8-inch springform pan. Let the cake cool before removing the sides of the pan. Then, transfer the cake to a serving plate or platter and let it cool completely. Top with fresh blueberries and generously sprinkle with blueberry sugar.
