How to Make Cheesy Sausage & Rice

Cheesy Sausage and Rice Casserole with comforting smoked sausage, tender white rice, and creamy cheddar cheese is a decadent ONE POT meal!

When comfort food is in order, sausage is kind of a must! Go hot or sweet Italian pork sausage, Andouille, or mild country turkey or chicken sausage to add a smoky flavor to everyday recipes.

If beef or pork are not your thing, there are many types of chicken sausage, cured lamb sausage, or say an Amish smoked sweet ring bologna. All will work.

Ingredients

The prep time for this is only 10 minutes! Cut the smoked sausage into rounds, while removing the casings from the Italian sausage so it crumbles easily as it cooks.

Cook and brown both Italian sausage as well as some smoked link sausage. I like to grill mine, but the stove top works great, too!

Melt some butter in a large Dutch oven or skillet and cook sliced onions and chopped garlic with some salt and pepper until soft and fragrant.

Add some rich chicken stock to the pan and bring everything to a boil before adding Basmati rice...long grain rice is persnickety so allow it time to cook all the way through.

A mixture of cream of onion soup, sour cream, milk, and shredded Cheddar cheese will be added at the end for ULTRA creaminess...

Allow the rice dish to rest, covered, for 10 minutes, then stir and DIG RIGHT IN! Dust with Parmesan cheese or hot pepper flakes if desired.

I like to ladle into shallow bowls and garnish with nothing more than minced parsley. Enjoy with a well-chilled Chardonay!
