In this recipe, chicken cutlet is blanketed in a decadent sauce of fresh lemon. It is offset with a good dry white wine, and a generous knob of sweet cream butter.

After a brief tryst with a seasoned flour mixture, it's dipped into an egg batter and pan sautéed until golden. The lemon sauce is decadent and easy if you are a beginner home chef.

In a shallow dish, whisk together some eggs with light cream. A pie plate works well for this. Combine salt, pepper and flour in a separate shallow bowl and place next to the egg mixture.

Dredge the chicken in flour, then in the egg mixture allowing the extra egg to drip back into the bowl. Transfer to the flour once again, turning to coat.

Heat some olive oil and some butter and add the flour and egg-dredged cutlets to the hot skillet. I like unsalted butter for this recipe.

Cook 2 or 3 cutlets at a time, turning once, until the chicken is well browned, about 3 minutes on each side.

To make the lemon sauce, wipe the skillet clean. Add a tad more butter to the pan and sauté some onion. Add some flour and then some wine, lemon juice and zest, and chicken broth.

Cook the sauce until it is reduced and slightly thickened, then strain through a fine mesh sieve to remove the onions. Return the sauce to the pan. The lemon flavor will be intense!

Plate this dish with angel hair or other favorite pasta. I like to twirl the pasta right in the sauce to get it good and coated. Offer Parmesan cheese tableside.
