Easy Cheesy Mexicali Chili Tater Tot Casserole

A big spoonful of pure comfort food, Easy Cheesy Mexicali Chili Tater Tot Casserole is an easy meal the whole family will enjoy!

No surprise, this is a fun meal that resonates with kids, but when I caught my 78-year-old Dad polishing off the last of this casserole, I knew we had a new family favorite on our hands!

Brown the meat and aromatics

Cook beef in a large skillet over medium high heat along with some chopped onion, celery, and garlic.

Once browned, stir in some Cheddar soup, chopped peppers, picante, chopped green chiles, aromatics, and fresh or frozen corn. I grill fresh and cut the kernels from the cob.

Adding FLAVOR!

Pour everything into a casserole dish...bake for 45 minutes or until tater tots are a deep golden brown and chili is bubbling up between the tots.

...top with frozen tater tots and a good handful of shredded cheese and bake until fragrant and bubbling!

The tot topping will be golden brown, the rich sauce beneath bubbling between the toasty nuggets, and an aroma that will bring them to the table willingly!

Spoon into shallow bowls and ENJOY!
