Boneless skinless chicken breasts Kosher salt and black pepper All-purpose flour Eggs Lemon juice and slices Unsalted butter Extra virgin olive oil Dry white wine Chicken stock or broth

In a shallow bowl or dish, whisk together two large eggs and some light cream. Set aside.

In a separate bowl, combine salt and pepper together with a bit of flour.

Season chicken cutlets with salt and dredge in the flour. Dip in the egg mixture and let excess drip off.

Transfer to the flour once again, turning to coat thoroughly. Gently shake off excess flour.
