Ingredients For Making This No Bake Lemon Pie

Prepare the Biscotti Crust


Pulse biscotti in a food processor until fine crumbs. In a large bowl, mix biscotti crumbs, butter and brown sugar. Save a mixture for topping the pie later if desired.

Prepare the Lemon Custard Filling


In a medium non-stick saucepan whisk together sugar and cornstarch. Turn heat to medium and whisk in milk, eggs, zest, juice and butter. Stir constantly scraping the bottom of the pan to prevent scorching.

To Garnish and Serve


If you can whip heavy cream, top the pie with fresh whipped cream. Sprinkle reserved biscotti crust crumbles on top. Garnish with fresh lemon slices or candied lemon peels.
