    Ingredients for Autumn Apple Parfaits

    • 4 Gala apples large, 2 peeled, 2 unpeeled, both chopped
    • 2 cups red grapes halved
    • 1/2 cup dried cranberries soaked in boiling water for 1 hour, drained
    • 1 15 ounce can mandarin oranges well drained
    • 1 cup vanilla Greek yogurt
    • 3 tablespoons lite mayonnaise regular mayonnaise may be substituted
    • 2 teaspoons lemon juice
    • 1/2 cup brown sugar light or dark, loosely packed
    • 2 teaspoons cinnamon
    • 3/4 cup pecans ** OPTIONAL chopped, or any nuts or seeds

    Instructions
     

    The Method

    • In a large bowl combine apple and lemon juice. Toss to coat well to prevent browning.
    • Add the grapes, oranges, rehydrated dried cranberries, and carefully toss to combine.
    • In a medium bowl whisk together yogurt, lite mayonnaise, brown sugar, and cinnamon. Pour over fruit and gently stir. Chill until serving. 
    • Garnish with cinnamon sticks.
