A Blackberry-Rosemary Vodka & Soda

- 1 cup fresh, very ripe blackberries frozen may be substituted
- 1 sprig fresh rosemary, plus more for garnish
- ¼ cup sugar
- ½ cup water
- 1 ½ ounces floral or citrus-flavored vodka I am using Kettle One Grapefruit & Rose
- ½ ounce freshly squeezed lime juice
- 3 ½ ounces seltzer
Muddle blackberries, rosemary, and sugar in a small saucepan until almost smooth. Add water and bring to a simmer over medium-high heat. Cook, stirring occasionally, until fragrant, about 5 minutes.
Set a swath of cheesecloth in a colander over a heatproof bowl. Strain the mixture into the cheesecloth, pressing on the solids to extract as much juice as possible. Refrigerate until cool, about 30 minutes.
Once syrup has cooled, transfer to a small carafe or beaker.
Combine 1 ounce of the syrup and the 1/2 ounce lime juice in a glass. Next, add the vodka. Add fresh ice cubes and top with seltzer. Garnish with more rosemary and a whole single blackberry, if desired.
