A Simple and Tasty Blueberry Compote Recipe

Made with fresh blueberries and a touch of lemon juice, this easy blueberry compote offers a smooth, velvety texture and rich flavor. It's easy to make and stores well in the fridge, making it a versatile addition to your menu!

Ingredients

  • 2 cups blueberries fresh; may use 2 cups frozen or half fresh, half frozen
  • 1/3 cup granulated sugar
  • 2 teaspoons lemon juice fresh
  • 1/2 cup + 3 tablespoons water divided
  • 1 tablespoon + 1 teaspoon cornstarch

Instructions

  • In a small bowl, dissolve 1 tablespoon plus 1 teaspoon of cornstarch in 3 tablespoons of water. Set aside.

  • In a small saucepan, combine 2 cups fresh blueberries, 1/3 cup granulated sugar, 2 teaspoons fresh lemon juice, and 1/2 cup water. Stir constantly over medium heat, then increase the heat to bring the mixture to a boil.

  • Reduce the heat to low once the mixture boils. Add the cornstarch mixture, stirring constantly until the compote thickens slightly. The mixture should coat the back of a spoon, and a line should remain when you run your finger through it. The sauce will continue to thicken as it cools, so remove it from the heat before it fully thickens.
  • Allow the berry compote to cool before transferring it to an airtight container and storing it in the fridge.

Notes

Using Frozen Blueberries - if using frozen blueberries, do not thaw, rather add the frozen berries directly to the saucepan and proceed with the recipe as written.
Make-Ahead - refrigerate the fully cooked and cooled compote in an airtight container up to 1 week. 
To Freeze - the compote can be frozen up to 3 months. Thaw in the fridge overnight before using.
