- 2 cups blueberries fresh; may use 2 cups frozen or half fresh, half frozen
- 1/3 cup granulated sugar
- 2 teaspoons lemon juice fresh
- 1/2 cup + 3 tablespoons water divided
- 1 tablespoon + 1 teaspoon cornstarch
In a small bowl, dissolve 1 tablespoon plus 1 teaspoon of cornstarch in 3 tablespoons of water. Set aside.

In a small saucepan, combine 2 cups fresh blueberries, 1/3 cup granulated sugar, 2 teaspoons fresh lemon juice, and 1/2 cup water. Stir constantly over medium heat, then increase the heat to bring the mixture to a boil.

Reduce the heat to low once the mixture boils. Add the cornstarch mixture, stirring constantly until the compote thickens slightly. The mixture should coat the back of a spoon, and a line should remain when you run your finger through it. The sauce will continue to thicken as it cools, so remove it from the heat before it fully thickens.
Allow the berry compote to cool before transferring it to an airtight container and storing it in the fridge.
Using Frozen Blueberries - if using frozen blueberries, do not thaw, rather add the frozen berries directly to the saucepan and proceed with the recipe as written.
Make-Ahead - refrigerate the fully cooked and cooled compote in an airtight container up to 1 week.
To Freeze - the compote can be frozen up to 3 months. Thaw in the fridge overnight before using.
