Autumn Apple Parfaits

- 4 Gala apples large, 2 peeled, 2 unpeeled, both chopped
- 2 cups red grapes halved
- ½ cup dried cranberries soaked in boiling water for 1 hour, drained
- 1 15 ounce can mandarin oranges well drained
- 1 cup vanilla Greek yogurt
- 3 tablespoons lite mayonnaise regular mayonnaise may be substituted
- 2 teaspoons lemon juice
- ½ cup brown sugar light or dark, loosely packed
- 2 teaspoons cinnamon
- ¾ cup pecans ** OPTIONAL chopped, or any nuts or seeds
In a large bowl combine apple and lemon juice. Toss to coat well to prevent browning.
Add the grapes, oranges, rehydrated dried cranberries, and carefully toss to combine.
In a medium bowl whisk together yogurt, lite mayonnaise, brown sugar, and cinnamon. Pour over fruit and gently stir. Chill until serving.
Garnish with cinnamon sticks.
