Crostini with Brie, Coppa and Raspberry - Easy and Elegant

Ingredients

  • 1 large Baguette 24 inches or longer
  • 1/2 cup Olive Oil
  • 1 4-inch Wheel Brie halved then each half cut into ¼ inch thin slices
  • 1/4 pound Coppa (capicola) each slice halved
  • 1/2 cup rosemary leaves fresh; loosely packed
  • 1 jar seedless raspberry jam
  • lemon juice from 1 fresh, whole lemon
  • fresh raspberries optional

Instructions

  • Preheat oven to 350°F. Line a large baking sheet with parchment or foil and set aside. Slice coppa in half or in thirds. Separate the thin strands. Slice brie into 1/4-inch strips.
  • Slice the baguette or other crusty bread slices into ½ inch rounds or half-slices. Brush both sides of each slice LIGHTLY with olive oil. Bake 3 minutes per side. Remove from oven.
  • In a saucepan, warm ½ cup raspberry preserves with juice of 1 fresh lemon. Whisk until smooth, then set aside to cool slightly.
  • Switch your oven to broil. Place a strip or two of brie atop each crostini. Drizzle LIGHTLY with the raspberry sauce. Sprinkle with chopped rosemary. Now add a strand or two of coppa to each crostini, bunching them so they appear ribbon-like when emerging from the oven.
  • Broil for 3-4 minutes until the jam and brie are bubbly and the coppa is golden brown. Allow to cool for 10 minutes.
  • Garnish with whole rosemary leaves or fresh raspberries. Serve at room temperature.

Notes
